Air Fryer Sweet Potato Cubes

Air Fryer Sweet Potato Cubes

Air Fryer Sweet Potato Cubes is a quick and easy 5 ingredient recipe. A must-try fall favorite vegetarian side made with pantry staples. Serve as a quick snack, with mains or enjoy with a bowl of hot soup.

Sweet Potatoes are quite versatile. Like regular potatoes, they can be roasted, air fried, deep fried, grilled, boiled and mashed. Quinoa Sweet Potato Patties and Sweet Potato Fries are some of the best ways to enjoy this delightful root veggie.

The fact that these sweet potato cubes are Gluten Free and Vegan and made with less oil, makes it a perfect addition to your weekday menu. A great way of including more vegetables in your diet. It is a kid-friendly recipe too (spices etc. can be adjusted)

It takes literally 5 ingredients, one bowl and an Air Fryer for this recipe. You can serve them warm with a generous squeeze of lime and finely chopped cilantro. I love serving it as side with Indian mains like Dal and Rice.

Ingredients

I have used purple sweet potatoes. You can use any variety (available in local farmers market or supermarkets) for this recipe.

Peeling the Skin of Sweet Potato?

If you plan to keep the skin on, scrub the potatoes well to remove any dirt or mud particles.

There is NO need to SOAK Sweet Potatoes in water (to remove excess starch)

Spices / Seasoning - I have used Garlic Powder and smoked paprika.

Variety of spices including Garam Masala, Curry Powder, Turmeric and ground Cumin can be used. If you prefer heat, add a small pinch of cayenne.

Experiment with spices or seasoning based on your family's taste and preferences.

I have used Extra Virgin Olive Oil for the recipe. I do recommend some quantity as it prevents the vegetables from appearing dehydrated or dried.

Note - For 500 grams of potatoes, we are using 1 tablespoon of oil.

Fall season is all about celebrating root vegetables.

The easiest way to serve Air Fryer Sweet Potatoes is with a bowl of tomato ketchup or Cilantro Mint Chutney.

If you are big on meal planning and want to include sweet potatoes / more seasonal vegetables in your diet, you might find some of the below ideas useful.

For an Indian Meal, I would suggest serving the sweet potato cubes as a side with Red Lentil Dal (Masoor Dal) or Chana Dal and Basmati Rice or Quinoa. This would be Gluten Free and Vegan Meal as well.

Serve as side with SOUP. Our favorites are Tom Kha or the Thai Coconut Soup, Broccoli Soup and Minestrone Soup for a hearty and filling lunch that combines pasta and beans.

Add the Air Fried Sweet Potato Cubes to Salads or Buddha Bowls. Serve as side with sandwiches, burgers or veggie wraps as a substitute to French Fries.
