Ingredients

Baby Potatoes – Clean and scrub the potatoes to remove any mud particles stuck on the surface. You can choose to peel the skin or leave it on.

Soaking the potatoes for 5-10 minutes before scrubbing helps. Saves time and water.

You can use regular potatoes - Yukon Gold, Russet or baby red potatoes. In case of medium or large potatoes, cut them into bite size chunks.

Cooking the Potatoes required? – You can parboil the potatoes in boiling salted water or just air fry them directly. Depends on how much time you have on hand.

Personally, I don't cook potatoes before air frying.

Za’atar - A Middle Eastern Spice mix made with dried thyme, oregano, marjoram, toasted sesame seeds, sumac and salt.

I love zaatar on Labneh (Yogurt Dip) and as a dipping sauce for freshly baked focaccia bread. Use it to season roasted vegetables, salad, roasted chickpeas etc.

This spice is easily available in leading supermarkets and grocery stores that stock Middle Eastern spices. It is also available online.

Oil – I have used regular Olive Oil for this recipe. You can use chili oil or garlic oil. Flavored or infused oil adds more flavor to the dish.

If using garlic oil, omit garlic powder from the ingredient list.

You can use Vegetable Oil or Avocado Oil instead of Olive Oil.

Step-wise Recipe

For best roasted potatoes, pre-heat your air fryer at the highest temperature for 5 mins.

Image 1 to 3 - Wash and cut the Baby Potatoes into half. Immerse them in water until you are ready to air fry and then drain, pat dry. Add the herbs and olive oil. Mix well until the potatoes coat with the spices.

Fresh herbs like mint, cilantro, coriander, spring onion greens or chives.
