Thick, comforting and soul satisfying Vegetarian Broccoli Soup Recipe that is made from scratch without any cream or cornflour. Absolutely delicious and a must try during soup season!

Winter season calls for soup recipes! Soups are a great way to satisfy hunger pangs especially when loaded with vegetables, they makes a filling meal or appetizer.

Soups are also great when you are in the need for some comfort food or are feeling under the weather.

We love broccoli at home and often end up buying 2 – 3 broccoli heads at one go, enough to last us for the week.

I use broccoli to whip up a delicious vegetarian Broccoli Rice. I use the stems or stalks of Broccoli to make a lipsmacking South Indian Style Chutney or Thogayal. It is spicy, tangy and nutty. Do try the Broccoli Stem Chutney

We enjoy soup for lunch with a side of salad, pasta or bread. On weekends, if I am serving soup as lunch, I make the meal extra special and serve it with some Oven Baked Smashed Potatoes with Herbs.

Broccoli Soup Recipe Ingredients

Broccoli – One head of Broccoli that weighs 500 gms (1/2 a kilogram). I have used some part of the stem attached to the florets for this recipe (check step by step pics below)

I have used fresh broccoli for this recipe. You can use frozen too. Thaw it completely before using.

Garlic – For this particular recipe, I have used a lot of garlic. Please do not be alarmed. It really adds flavour and pairs well with broccoli.

Olive Oil – You can add butter if you prefer or use a combination of both.

Water – I don’t usually resort to stock cubes or buy ready made vegetable stock because we go easy on sodium consumption at home.

For my version of the soup, since I am using a lot of stems, water is required to cook them. If you are not using broccoli stems, please steam the broccoli for 5 to 7 minutes, until tender.

Milk – Organic Cow Milk is added to the recipe which can be replaced with coconut milk or almond milk for a vegan version.

If you prefer cream, you can use around 1/4 cup for the below mentioned quantity.

This is not a spicy soup and hence completely kid-friendly. You can even serve this soup to toddlers. This is quite filling and nutritious and a great way to include broccoli in their diet.

The soup can be bulk cooked and stocked in the refrigerator. I make a small batch, just enough for the two of us at home to last for 2 meals. This soup would freeze well too.

STEP BY STEP BROCCOLI SOUP RECIPE

Pick a fresh broccoli without any black spots or visible damage by worms.

Broccoli

After you chop the broccoli into florets (with some stem / stalk attached), soak them in hot water for atleast 10 minutes.

I follow this process for cruciferous vegetables like Cauliflower, Broccoli etc to get rid of small worms etc, if any.

After 10 minutes, drain all the water, rinse again, drain and prep for the soup.

Heat a sauce pan, add olive oil, chopped garlic and onions. Saute until the onions are translucent.

Add the blanched and drained broccoli florets along with some water to cook and salt to taste.

Cook this until the florets and stems are tender. Switch off the flame, allow it to cool.

Transfer the contents into a mixer grinder jar (not applicable if you have immersion blender) and grind well. No water is required.

Transfer the soup back to the sauce pan, Allow it to reach a boil and add black pepper powder and nutmeg powder. Check for salt and add, if required.

Now add milk, mix and switch off the flame. Serve piping hot with accompaniments of your choice.

Ingredients
  

1 cup is 250 ml, 1 tbsp is 15 ml and 1 tsp is 5 ml

  • 500 gms Broccoli
  • ½ cup Onions (finely chopped)
  • 12 nos Garlic Cloves (small) Use 5 large or 2 tsp garlic paste
  • 1 tbsp Olive Oil
  • 2 cups Water Read Notes Below
  • ½ cup Milk
  • ¼ tsp Nutmeg Powder
  • ½ tsp Black Pepper Powder
  • Salt to taste

Notes

  • The Recipe is Gluten Free. 
  • For a Vegan Version of the recipe, skip the milk and use coconut milk or almond milk. 
  • If you prefer cream in soups, skip the milk and use 1/4 cup cream. 
  • Vegetable stock can be used in place of water.
