Masala peanuts recipe is a delectable savory snack from Indian Cuisine. Raw peanuts are coated with gram flour and Indian spices. Traditionally, it is deep fried and served as tea time snack. However, our air fryer version cuts down the oil consumption to just a tablespoon.

Other than roasting peanuts in air fryer, this is the next best thing using peanuts!

These Indian Spicy Peanuts are perfect appetizers or bar snacks. Serve it over some drinks at your next dinner party and watch your guests swooning over these.

The ingredients are pantry staples (or easily available in Indian grocery stores). These snacks are ideal for travel, treks, camping, board game nights, binge watching shows on Netflix and much more!

You absolutely cannot stop eating this once you've tasted it! It is crunchy, crispy and super addictive.

Ingredients

Ingredients for masala peanuts in air fryer

Raw Peanuts with skin - This recipe calls for unsalted, raw peanuts with skin. The skin helps in holding the spices and flour coating.

Gram Flour, chickpea flour or Besan - This forms the coating for peanuts or the crunchy layer. The flour is naturally gluten free.

Rice Flour - Adding rice flour makes the batter light and gives the flour coating a crispy texture. You can use all purpose flour or corn flour but I would highly recommend rice flour. It is gluten free as well.

Spices - Turmeric, Garam Masala, red chili, amchur (dry mango). I have used Kashmiri Red chili which can be substituted with paprika. It only provides color, not heat.

Amchur or dry mango powder can be substituted with lime juice. If you are adding lime juice, adjust the quantity of water used for binding the flour and spices.

Extra Virgin Olive Oil (or any oil with high smoke point)

Full list of ingredients is given below in the recipe card.

Air Fry at 180 degree Celsius for 12 to 15 mins or until crispy and golden.

After about 5 mins of air frying, shake the basket gently. Spray some oil to prevent the coating from drying and falling off.

The masala peanuts will crisp up once completely cool.

Notes

Ingredients and Substitutes
  1. Raw Peanuts with skin - Use unsalted, raw peanuts with skin. The skin helps in holding the spices and flour coating.
  2. Gram Flour and Rice Flour are naturally gluten free and vegan. Instead of rice flour, you can use corn flour or all purpose flour. It gives a crispy texture to peanuts.
  3. Spices - I have used Kashmiri Red chili which can be substituted with paprika. It only provides color, not heat.
  4. Amchur or dry mango powder can be substituted with lime juice. If you are adding lime juice, adjust the quantity of water used for binding the flour and spices.
  5. Use Extra Virgin Olive Oil or any oil with a high smoke point.
Tips for crunchy masala peanuts
  1. Pre-heat the air fryer and brush / spray oil before placing the peanuts. It will prevent the peanuts from sticking.
  2. Do not shake the basket before 5 mins of air frying. Allow the layer of spices and flour to cook and stick to the peanuts.
  3. I would advise using / adding 1 cup of peanuts at a time, while air frying, else you will end up with chunks or clusters of peanuts stuck to each other.
Storage Suggestions
  1. Once the air fried masala peanuts have cooled, store them in an airtight container. It has not lasted more than a couple of days at home because its quite addictive.
  2. You can double the quantities and make a large batch for festivals like Diwali or holiday season gift packs. Air tight glass jars or tupperware boxes are best for storing.
  3. Keep away from moisture. Store in a cool dry place.
