Who doesn't love potato wedges? My husband is a huge fan and loves it with sandwiches or burgers.
The fact that the potatoes have been air fried is a huge relief. The recipe uses 1 tablespoon of oil in total and serves 2-3.
Wedges are insanely addictive which means you might need to double the recipe. I guarantee the first batch of wedges will be gone in less than 5 secs.

Air fryer is a life saver! You can satisfy fast food cravings with just couple of spoons of oil.
Kids love fries and wedges and it is a delight to watch them enjoy a bowl of their favorite snack without worrying about re-used oil used for deep frying.
Serve these masala potato wedges for game nights, kids birthday parties or potlucks.
It takes 8 ingredients in total (including potatoes) to make these addictive Potato Wedges. I have included Oven Instructions in the recipe card for folks who don't have an air fryer.
Ingredients for making potato wedges in air fryer

Potatoes - Wash and scrub the potatoes well. It's best to keep the skin on (best part about wedges).
Use any variety of potatoes (except baby potatoes, for obvious reasons) available in your pantry.
Yukon Gold is perfect for fries and wedges.
Avoid new or waxy potatoes for fries and wedges as they have high moisture content. The wedges would turn soggy and won't crisp up!
Seasoning - There are plenty of options for seasoning or you could just keep it simple with salt and pepper. Classic seasoning never goes out of style.
I have used Rosemary, which IMHO is perfect with potatoes. Use fresh or dried, as per availability.
Garlic Powder, Turmeric, Red Chili / Paprika and Black Pepper.
Seasoning with salt is important. Bland wedges are a strict no-no.
Extra Virgin Olive Oil - Use any oil that has a high smoking point. Avocado Oil, Sesame, Coconut are perfect options.
Oil Free Potato Wedges - You can skip oil and/or adjust quantity.
How to cut and prep potato wedges
The fact is no one likes soggy potato wedges.
Step-wise process (images below) will ensure the wedges taste crunchy on the outside and soft within.
Remember, we are not using any Cornstarch to coat the potatoes here! These are simple homestyle potato wedges.
Step 1 - First, scrub the potatoes well and wipe dry using a kitchen towel.

Step 2 - Cut the Potato in half (lengthwise)

Step 3 - Further, cut each half of the potato into two parts.

Step 4 - Each of the 4 quarters can be divided into 2-3 thick wedges, depending on the size of the potatoes.

Step 5 - Soak the potatoes in ice cold water for 20 mins.

Drain the water completely after 20 mins, pat dry using a dry kitchen towel. Air dry it for a few minutes to ensure there is no moisture.
Now the wedges are ready to be coated with spices and air fried!
How to make potato wedges in air fryer
Pre-heat the air fryer at 180 degree Celsius for 3-4 minutes. Brush / spray oil in the basket / mesh to prevent the wedges from sticking.
Add the potato wedges to a bowl along with seasoning.

Mix well until the potatoes are coated with the spices.

Place them carefully in the pre-heated air fryer basket.

Air Fry at 180 Degree Celsius for 15 minutes (I had to air fry in 2 batches). Remove and shake the basket in between to ensure the wedges are evenly crisped.
Serve piping hot with a dip of your choice.

Serving Suggestions
Serve Masala Potato wedges with Tomato ketchup or homemade garlic aioli. You could pair it with hot sauce - Sriracha!
On a hot summer day, potato wedges are perfect appetizers with a glass of lemonade or fresh fruit juice. Do try pomegranate juice or Shikanji - Indian Lemonade with spices.
Serve air fryer wedges with sandwiches, Burgers, Wraps or Falafel and Pita
Recipe FAQ's
Soaking potatoes before air frying helps get rid of excess starch. Excess starch causes potatoes to become soggy. This process is important for crispy fries or potato wedges.
Air Fryer is the best way to reheat potato wedges. Never microwave wedges or fries as they would release steam and turn soggy. Add leftover wedges to the air fryer basket, spray some oil and air fry at 160 degree Celsius for 3-5 mins or until it crisps up.
Leftover potato wedges can be stored in an airtight container in a refrigerator. It stays fresh for 3-4 days and can be reheated in the air fryer.

- Spices / Seasoning - Some of the options are Italian Herbs and Peri Peri. You can also add onion powder with garlic powder.
- I have used Extra Virgin Olive Oil. However, use any oil that has a high smoking point. Avocado Oil, Sesame, Coconut are perfect options.
- Oil Free Potato Wedges - Unless you have been advised "no oil" diet. A little fat is essential for flavor and taste. Oil Free potato wedges would taste dry and needs to be consumed immediately.
- Pre-heat the oven at 180 degree Celsius for 10 mins. Line a baking tray with parchment paper or grease the tray with oil and add the seasoned wedges.
- Bake potato wedges at 180 degree Celsius for 30-35 minutes, or until golden brown.
- 15 mins into baking, remove the tray carefully, turn the potato wedges using tongs and place it back in the oven for even roasting.
