Easy Mango Salsa recipe - A refreshing and colorful appetizer or condiment made with ripe mangoes, crunchy bell peppers, pickled jalapeno and fresh cilantro. This salsa doubles up as a filling salad and can be served as a side with grilled vegetables, tacos, nachos or chips.
Gorgeous and Vibrant, Mango Salsa for me, sums up "Eat the Rainbow". A bowl filled with fresh ingredients, bright colors and each ingredient lending its own flavors, making it a complete dish.

During summers, I ditch the mundane curry and rice bowls with this lipsmacking Mango Salsa. Being completely oil-free, I enjoy a big bowl of salsa (without the chips, of course).
The recipe can be easily customized. While this bowl was thoroughly enjoyed by the husband and I for lunch, this can be easily doubled or tripled for serving a crowd.
The Mango Salsa recipe is Gluten-Free, Vegan and nut-free.
Ingredients

Mango - I have used ripe Alphonso Mango for the recipe. These are incredibly sweet and have less fibrous strands, making it great for salsa, smoothies and much more.
In US, UK and Canada, Kesar Mangoes are available in Indian stores. Also mangoes from Pakistan namely Chaunsa are sometimes available. Other varieties include Kent, Tommy Atkins OR Mexican Ataulfo.
Tomato & Onion - Both the ingredients are a must for salsa and should be finely chopped.
Bell Pepper - You can use any colour - Red, Orange, Yellow or Green (the one used here).
Pickled Jalapeno - I love the combination of mango with pickled jalapeno that are soaked in brine. It adds extra oomph to the salsa.
Cilantro - Add lots of fresh cilantro to your salsa. They are packed with flavor and freshness.
I pretty much keep all salsa recipes simple with a good squeeze of Lime Juice and pink salt.
You can add approximately 1/4 tsp of chilli flakes or cayenne for that extra kick.
My secret ingredient here is fresh Red Jalapeno which is added for the heat. I have removed the innards and the seeds, finely chopped them and added to the salsa. This is optional and only to be added in case you like a bit of heat in your salsa. This can be replaced with fresh green chilies, dry red chili flakes and / or cayenne pepper.
Variations

Avocado + Mangoes - If you are planning a Cinco de mayo party at home, skip the guacamole and add ripe avocados to the mango salsa and use it as topping for tacos or tortillas.
Turn this into a Tropical Salsa Fruit Bowl by adding fruits like kiwi, pineapple, star fruit, rambutan or lychees.
You can combine our CORN SALAD with Mango Salsa as the ingredients are pretty much the same and would be in season during summers.
Salad For Lunch - Add cooked Chickpeas or any beans of your choice, Quinoa or Millets to turn this into a healthy, filling meal.
How to Store Salsa
We never usually have leftovers at home, especially mango salsa as its our favorite.
However, if are throwing a party for a group of people and are left with a decent quantity of salsa, store it in the refrigerator in an airtight container (you don't want your refrigerator smelling of onions every time you open it).
They keep fresh for 24 - 48 hours.

Mango Salsa Recipe
Ingredients
- 1 cup Alphonso Mangoes approx 2 mangoes, finely chopped
- 1 Tomato medium finely chopped
- 1 Onion medium finely chopped
- 1 Bell Pepper medium finely chopped
- 6 Pickled Jalapenos finely chopped
- 1 Red Jalapeno Pepper cored, seeds removed and finely chopped OR use 1/4 tsp red chilli flakes
- Juice of 1 Lime
- ¼ cup Cilantro finely chopped
- salt to taste
Instructions
- In a bowl, add all the ingredients (finely chopped mangoes, bell pepper, onions, tomato and jalapeno).
- Squeeze fresh lime juice, add salt to taste and add finely chopped cilantro.
- Mix well with a clean dry spoon. Refrigerate it for atleast 30 minutes before serving.
