Ingredients

Kiwi - Use firm yet ripe Kiwi. It will be slightly difficult to chop overripe fruit.
Kiwi is not locally grown in India. However, we get Zespri Green Kiwi variety in our local supermarket. The Sun Gold variety (yellow kiwi) is not easily available.
Use any variety that is easily available or mix and match!
Onion - Red Onions are great for salsa and salad. However, you can use any variety that is easily available.
Tomato - You can use cherry, grape or heirloom tomatoes for salsa. You can scoop the seeds out if you don't prefer them.
Bell Pepper - You can use any colour - Red or Yellow for the recipe. I have used green as it was readily available in the refrigerator.
Lemon Juice - Honey - Herbs (Cilantro and Mint Leaves)
How to make Kiwi Salsa
Once all the ingredients are ready (read - finely chopped), mix everything in a bowl, add herbs, lime juice and honey.
Refrigerate the salsa for 30 mins. Trust me, it only gets better!

Variations
Kiwi Avocado Salsa - You can add chopped or lightly mashed avocado pieces to the salsa. A great twist to the classic guacamole.
Kiwi Mango Salsa - A mix of kiwi and mango would be a great combination. Since mango is quite sweet, you can clearly avoid the honey or sweetener from the recipe.
Pineapple Kiwi Salsa - Use fresh pineapple. Canned pineapple is loaded with sugar.
Kiwi Mango Strawberry Salsa - Best use of summer fruits! A perfect afternoon snack for hot days.
If you prefer spicy Kiwi Salsa, add finely chopped jalapeno. Pickled Jalapeno also works for this recipe.
Recipe FAQ's
The skin of kiwi fruit has a lot of fiber. The skin is thick and hairy. For recipes like salsa, smoothies or fruit salad, I wouldn't recommend using peel / skin of kiwi fruit.
Always buy a firm and hard kiwi fruit which you can easily ripen at home in a couple of days.
Wrap kiwi fruit in newspaper and keep in a cool, dry place or kitchen counter. You can ripen this quickly, just like avocados, by placing the fruit next to apples and banana in your fruit basket. It takes 48 hours to ripen at room temperature. Once the fruit is ripe, you can store the fruit in refrigerator for a week.

Kiwi Salsa Recipe
Ingredients
- 2 Kiwi Fruit peeled and finely chopped
- 1 Green Bell Pepper (Capsicum) finely chopped
- 1 Onion (large) finely chopped
- 2 Tomatoes (medium) finely chopped
- Juice of 1 Lime
- Finely chopped mint and coriander / cilantro approximately 1 -2 tablespoons
- 1 teaspoon Honey read notes for substitutes
- salt to taste
1 cup is 250 ml, 1 tbsp is 15ml, 1 tsp is 5ml
Instructions
- Into a bowl, add finely chopped ingredients (kiwi, tomato, onion, bell peppers). Mix well.
- Squeeze juice of 1 lime, add honey, fresh herbs and salt to taste.
- Mix well using a spoon. Taste and add extra lime juice, salt or honey, if required.
- Refrigerate the salsa for atleast 30 minutes and serve with tortilla chips or nachos.
