Kiwi Salsa Recipe

Kiwi Salsa, an easy Mexican condiment served as appetizer or entrée with nachos, tortilla chips or tacos. The salsa can be served as a side salad with grilled veggies or skewers. Easy, No-cook recipe made in under 20 minutes and serves a crowd.

Ingredients

  • 2 Kiwi Fruit peeled and finely chopped
  • 1 Green Bell Pepper (Capsicum) finely chopped
  • 1 Onion (large) finely chopped
  • 2 Tomatoes (medium) finely chopped
  • Juice of 1 Lime
  • Finely chopped mint and coriander / cilantro approximately 1 -2 tablespoons
  • 1 teaspoon Honey read notes for substitutes
  • salt to taste

1 cup is 250 ml, 1 tbsp is 15ml, 1 tsp is 5ml

Instructions

  • Into a bowl, add finely chopped ingredients (kiwi, tomato, onion, bell peppers). Mix well.
  • Squeeze juice of 1 lime, add honey, fresh herbs and salt to taste.
  • Mix well using a spoon. Taste and add extra lime juice, salt or honey, if required.
  • Refrigerate the salsa for atleast 30 minutes and serve with tortilla chips or nachos.

Notes

Ingredients and Substitutes - Honey can be replaced with sugar, agave or maple syrup if you like. It is optional and only to be used if kiwi is slightly tart. 
Tips to ripen Kiwi Fruit quickly - Wrap kiwi fruit in newspaper and keep in a cool, dry place or kitchen counter. You can ripen this quickly, just like avocados, by placing the fruit next to apples and banana in your fruit basket. It takes 48 hours to ripen at room temperature. Once the fruit is ripe, you can store the fruit in refrigerator for a week.
Variations - Add Avocado, Mango, Pineapple, Strawberry and jalapeno (for spice lovers) to the salsa.
