Mango Parfait with yogurt and homemade granola - A Summer Friendly breakfast or late afternoon pick-me up snack that can be made ahead and stored in the refrigerator. This is a perfect way to enjoy dessert for breakfast.

I prefer parfaits during summers as they are easy to put together, can be assembled quickly in the morning under 10 mins.

Parfaits are perfect grab-n-go breakfast as well. No more excuses of skipping breakfast.

All the components of this recipe are made from scratch. However feel free to use store bought ingredients, if hard-pressed for time.

Ingredients & Substitutions

Mango Pulp - The recipe uses homemade mango pulp. Since the fruit is naturally sweet, I have not added sugar.

How to Make Mango Pulp at home - Wash and peel the mangoes, roughly chop and add it to a blender jar. Do not add any water while blending the mangoes. Mango Pulp can be refrigerated upto a week or frozen up to 6 months.

The recipe is quite versatile and can be made with seasonal fruits like berries, grapes, stone fruits etc. Top it with nuts or dry fruits like walnuts, hazelnuts, cranberries, almonds, pistachios.

Unsweetened Yogurt - I have used homemade yogurt. You can use flavored yogurt like Vanilla or Mango Yogurt. Flavored yogurt may contain sugar. Greek Yogurt is an option.

Vegan Yogurt - I would recommend Coconut Yogurt for this recipe. However, you can use any variety that's easily available in the supermarket.

Granola - Using homemade granola has a lot of benefits, including the fact that its budget friendly. You can bulk up the granola with nuts, seeds and oats.

Store bought granola may contain corn syrup. Always check the list of ingredients on the box, before buying.

You can substitute Granola with Muesli OR you could just add handful of nuts, seeds of your choice or dried fruits.

Sweetener

Mango pulp is naturally sweet and the granola contains some amount of honey. If you prefer the parfait on a sweeter side, you can add extra honey. Honestly, you won't need any.

For Vegan substitutes, use stevia, agave, coconut sugar or maple syrup.

Step-wise Instructions - Mango Parfait Recipe

This recipe serves 2 adults as breakfast, afternoon snack or dessert. You can double the recipe, if you like.

Add granola as base, followed by layers of yogurt and mango pulp. I have used 4 tablespoons of granola, 2 each serving. You can add extra, if you like.

Top the parfait with some granola or roasted nuts and chopped mango pieces.

Mango Banana Parfait - Add a layer of sliced bananas along with granola.

Mango Kiwi Parfait - The mild tangy taste of kiwi fruit pairs wonderfully well with yogurt and sweet mangoes.

Mango Oats Parfait - Substitute the granola with oats. You can skip the yogurt with dairy free milk of your choice for a vegan recipe.

Mango Chia Pudding Parfait - You can add chia seeds to the yogurt or mango pulp to make it a fiber rich filling breakfast treat.

Shelf Life of Mango Parfait

It stays fresh under refrigeration for 24 hours. We usually set this overnight to enjoy it next morning for breakfast or mid-morning snack.

Is Mango Parfait healthy?

It has fruits, yogurt and homemade granola (in limited portions) making it a healthy choice of breakfast or snack.

Ingredients
  

  • 1 cup Mango Pulp
  • 1 cup Yogurt unsweetened
  • 4 tablespoon Granola
  • ½ cup Mangoes roughly chopped, for garnish

1 cup is 250 ml, 1 tablespoon is 15ml

Instructions
 

  • In a serving glass, add 1 tablespoon of granola, followed by spoonful of each, yogurt and mango pulp.
  • Repeat the process until the glass is almost 3/4th full. Top with granola and chopped mangoes.
  • Refrigerate until you are ready to serve.
