Notes

Mango Pulp - The recipe uses homemade mango pulp.
How to Make Mango Pulp at home - Wash and peel the mangoes, roughly chop and add it to a blender jar. Blend until smooth consistency. Mango Pulp can be refrigerated upto a week or frozen up to 6 months.
The recipe is quite versatile and can be made with seasonal fruits like berries, grapes, stone fruits etc. Top it with nuts or dry fruits like walnuts, hazelnuts, cranberries, almonds, pistachios.
Note - Avoid pineapple and citrus fruits like oranges and sweet lime. They would taste bitter when mixed with yogurt.
Unsweetened Yogurt - You can use flavored yogurt like Vanilla or Mango Yogurt. Flavored yogurt may contain sugar. Greek Yogurt is an option.
Vegan Yogurt - I would recommend Coconut Yogurt for this recipe. However, you can use any variety that's easily available in the supermarket.
You can substitute Granola with Muesli OR you could just add handful of nuts, seeds of your choice or dried fruits.
Sweetener - This is a no-added sugar recipe as mango pulp is naturally sweet and the granola also contains some honey. If you prefer the parfait on a sweeter side, you can add some honey. For Vegan substitutes, use stevia, agave, coconut sugar or maple syrup.
This recipe serves 2 adults as breakfast, afternoon snack or dessert. It can be easily doubled.
