Fruit and Yogurt Breakfast Parfait (Healthy Make-Ahead Breakfast)

Yogurt Parfait Recipe is a healthy, no-cook, make-ahead breakfast recipe made with seasonal fruits, homemade yogurt and nuts. Ready under 15 minutes, this parfait also doubles up as a delicious guilt free dessert when craving for something sweet.

We absolutely love parfaits for breakfast and the Variations are endless. It is a great way to begin your day with fruits. Layers of Fruit and Yogurt makes it a healthy start to the day providing the much needed energy and keeping your gut health in check (thanks to yogurt).

This is something I enjoy as my first meal after a 12 hour Intermittent Fasting or when I have binged during the weekend. I find this breakfast to be instantly energizing. At times, I skip the honey and just enjoy the combination of fruits, nuts and yogurt.

This Parfait is also an ideal grab-n-go breakfast option. The best part about this recipe is that you can prep the previous night, go to bed and wake up early morning to a healthy breakfast.

Not only adults but kids would totally love this "dessert for breakfast" parfait. This makes a great after school snack and ideal for summers.

What is a parfait?

Parfait, a dish originated in France is a dessert which resembles a custard like puree. The American version of the dessert uses granola, nuts, yogurt and fruits. It is a layered dessert, served chilled.

Mango Yogurt Parfait is something you should definitely try when the fruit is in season. This parfait recipe does contain homemade Granola.

Parfait's are perfect summer friendly breakfast as there is Zero Cooking involved. Also it is the season when you crave for chilled desserts or frozen treats. This recipe is light in terms of sugar and hence far more healthier than store bought frozen treats.

Ingredients

Ingredients for healthy Yogurt  parfait recipe

Yogurt - Homemade Curd or Yogurt that almost resembles a custard is an excellent choice for parfait. I have used unsweetened Yogurt. You can add flavored yogurt of your choice and depending on the fruits you plan to use for the parfait.

Vegans can opt for suitable Vegan Curd or Yogurt options.

Mixed Fruits - I have used black grapes and strawberries. As you can notice from the pic above, I have sliced the grapes along with the strawberries.

Slicing the grapes is optional but I love how it instantly absorbs the yogurt when assembled in a glass.

Honey - Instead of drizzling the honey on top, I prefer adding it to the curd and then layering the fruits.

Other Substitutes for Sweeteners are Agave, Coconut Sugar, Palm Sugar, Maple Syrup.

Nuts - I have used black raisins and roughly chopped almonds.

Variations

This parfait recipe can be easily customized according to your family's tastes and preferences. Also keeping in mind availability of seasonal fruits. Mix and match, use your creativity. This is the best way to encourage your family to consume fruits.

Also perfect for bachelors, dorm room students / hostel kids who struggle with breakfast options especially with their busy schedule.

Greek Yogurt Parfait - If you don't make yogurt at home, use store bought greek yogurt. It is thicker than regular yogurt making it an ideal choice for this breakfast cum dessert recipe.

Fruits like Bananas, Berries, Mangoes, Apples, Pears that can be used for parfait. Use a combination of firm and soft fruits.

Avoid citrus fruits as they taste bitter when combined with yogurt. If you absolutely must, add them just before serving and not overnight.

Watermelon is another fruit I wouldn't recommend. It contains a lot of water which spoils the creamy texture of the yogurt.

Add Nuts of your choice. Hazelnuts, Pecans, Walnuts, Brazil Nuts, Pistachio, Cashews and Almonds are all great options. Toasted seeds (pepitas, watermelon seeds, pumpkin) make a great addition as well.

Fruits like Cranberries and Pomegranate available during the holiday season turns the parfait into a festive dessert cum breakfast treat.

Homemade GRANOLA or TRAIL MIX can be added while layering the parfait. It adds a bit of crunch and texture to the otherwise smooth and creamy parfait. It can be substituted with store bought granola, cereal or muesli.

If you don't enjoy yogurt, yet want to include a good portion of fruits in your diet, try this Indian Style Fruit Salad known as Fruit Chaat Recipe. It has assorted fruits and few Indian Spices. It makes a perfect potluck appetizer or during summers / bbq season.

Note - Avoid canned fruits or Fruit Cocktail for this recipe. It may taste good but they are soaked in sugar syrup for preservation. It is most definitely "not healthy"

Ingredients
  

1 cup is 250 ml, 1 tablespoon is 15ml, 1 teaspoon is 5 ml

  • 1 cup Yogurt or Curd Use thick unsweetened yogurt for best results
  • 1 cup Sliced Strawberries
  • ¾ cup Grapes
  • 2 tsp Honey
  • 1 tbsp Almonds (roughly chopped)
  • 10 Black Raisins

Instructions
 

  • In a bowl, add chilled yogurt and honey. Whisk well and keep aside
  • In a serving glass, add few strawberries and grapes followed by a tablespoon of the whisked yogurt. Repeat the process of layering the fruits and yogurt.
  • Top it with chopped almonds and raisins. Serve Chilled.

Notes

  1. I have used home made curd made from organic cow milk. You can use greek yogurt. 
  2. Any sweetener can be used - Honey, agave, maple syrup or granulated sugar can also be used. Whisk it well with the curd. 
  3. This is an easy make-ahead breakfast which you can just leave overnight in the refrigerator and enjoy next morning especially during summers. 
  4. Use any fruits available at home. The recipe is easy customizable.
