Let me also go ahead and tell you that these cutlets are made with sweet potatoes. The Recipe is Vegan and uses no nuts either. So basically if you are looking at a starter recipe without potatoes and breadcrumbs, this is a perfect choice.

Even though, traditionally, these cutlets are deep fried, you will certainly not regret making this Air Fryer version.

This easy non fried Indian vegetarian snack recipe will be perfect for hosting, entertaining and festive luncheons with family and friends. Especially if you are looking at a vegetarian and vegan party menu, this appetizer recipe would be an ideal choice.

This is also a No Onion No Garlic Snack recipe.

About Cutlets

Originated from the French word “cotelette” are a popular snack recipe loved by all age groups. They make excellent hors d’oeuvre at dinner parties and can be served with cocktails too.

Cutlets, vegetarian, to be specific, are made with a mix of vegetables, paneer or Indian Cottage cheese. This mixture is shaped either round, heart shaped or oval (like I have) and dipped in a slurry of cornflour + water.

It is further coated with breadcrumbs for that crispy exterior and finally deep fried until golden brown.

However, in our version of the recipe, there are no dairy products involved. The recipe does not use any nuts either and the cutlets are AIR FRIED.

Cutlets are served with tomato ketchup and coriander chutney. It can also be served with a side of salad, especially while hosting dinner parties at home.

I have kept the recipe pretty simple and even listed down some ideas to use the leftover cutlets. Don’t forget to try them! They are awesome!

In our recipe today, we are NOT DEEP FRYING and instead resorting to our AIR FRYER. There are no bread crumbs involved nor do I dip the solution in All purpose flour or corn flour. The end result you ask – Delicious, Guilt Free Snack for the entire family!

Ingredients for Veg Cutlet Recipe in Air Fryer

Sweet Potatoes – They replace the potatoes in the traditional recipe making it more filling and fibre rich.

The sweet potatoes have been pressure cooked (with skin) and then peeled and mashed for the recipe. If you are planning to make this for lunch, it would be ideal to pressure cook the potatoes the previous night to save time.

Carrot Add Grated carrots instead of chopped. I have used the orange variety which are sweet.

Sweet Corn – I have steamed the sweet corn with some salt and turmeric powder. This ingredient is always available in our refrigerator at home as it goes with many dishes.

You can use frozen sweet corn too. Thaw, steam and use it for the recipe.

I prefer steaming corn kernels instead of cooking them in boiling water.

Capsicum – You can use any variety of bell peppers for this recipe. Chop finely.

Cooked Green Peas – If using frozen peas, thaw and cook them before adding.

Oats – Since I promised no breadcrumbs, I am using Oats for the recipe. I have used quick cooking oats (Quaker Oats to be more specific) which are lightly roasted to avoid raw taste. You can powder them and add with vegetables, especially if you have picky eaters at home but I have used them as it is.

Ginger Paste – I freeze ginger paste at home. They are measured and frozen which makes it easy for me to include in recipes directly.

Spices for the CutletsKashmiri Red Chilli Powder, Garam Masala Powder, Turmeric Powder, Chaat Masala Powder, Amchur Powder (dry mango)

HerbsCoriander leaves finely chopped (including stems)

The idea is to use as many vegetables as you can and make it filling. Let me go ahead and suggest you some of the variations below that I have tried at home.

What Other Ingredients Can I add for Veg Cutlets?

  • French Beans – finely chopped and preferably lightly steamed to avoid the raw taste (since we are air frying)
  • Finely chopped spinach leaves
  • Beetroots – Cook the beetroots before grating. Please note the colour of the cutlets will change with the addition of beets.
  • Paneer – You can either crumble or grate (preferred) and add to the vegetable mix.
  • Broccoli or Cauliflower – They need to be finely grated and lightly steamed before adding. Always soak the florets in some boiling water to get rid of the worms before proceeding to cook.

Experiment with different vegetables based on availability. These cutlets are a great way of feeding kids all sorts of vegetables and making it delicious. If you add less spice, these can make a great option as finger foods for toddlers.

These cutlets can make a great after school snack and can be easily packed for lunch box at school. I will also list out some delicious ways to use the leftover cutlets as well.

On weekends, these veg cutlets can be served with some Masala Chai (especially during winters) and a side of chutney.

Best part is you can prep and store these cutlets in advance, especially if you have hungry kids at home who demand snacks all the time. You can batch air fry these cutlets and serve them hot on demand!

How to Use Leftover Veg Cutlet?

I Always Always make extra cutlets at home! My husband loves it and always wishes he had more. With air fryer at home, it is easy to just fry a batch and serve piping hot.

I shape and freeze a batch and then air fry when required (thaw and brush with some oil before air frying). Here are a variety of ways in which we enjoy these veg cutlets at home.

Burgers using Veg Cutlets – This one is a no-brainer! I bake burger buns and then stuff them with these cutlets. Add a layer of lettuce, onions and tomatoes and you have yourself some delicious Vegetarian Burgers that aren’t deep fried.

Wraps – Leftover Rotis or Paratha (preferred) + a spread of hung curd and chutney + couple of pieces of the leftover cutlets, some lettuce torn, few slices of capsicum and onions, wrap and stuff in your mouth!

These make a quick lunch for two, especially during summers! Wash it down with buttermilk or soup, depending on weather.

Veg Cutlets make great stuffing for grilled sandwiches. You can crumble the cutlets or mash them lightly and stuff them between bread pieces, add some raw vegetables and grill it with some butter.

You can also make a quick Dahi Aloo tikki Chaat. Just crumble some cutlets, add ladles of thick whipped dahi or curd, throw in some chutneys, add some cooked chickpeas or sprouts, sprinkle sev or papdi (optional), chaat masala powder and roasted jeera powder.

These tips are handy especially when you have leftovers after hosting a dinner party at home. These ideas can be used with both fried and air fried cutlets.

Step-wise Veg Cutlet Recipe

In a wide bowl, add boiled and mashed sweet potatoes, cooked peas, steamed sweet corn, grated carrots and finely chopped capsicum.

Add all the spices, ginger paste, quick cooking roasted oats and salt to taste.

Now add the finely chopped coriander leaves (I have used stems as well).

Mix everything together.

Divide and take equal portion of the cutlet mixture and shape them into “oval” shape. Once the cutlets are shaped, preheat the Air Fryer at 200 Degrees C for 5 minutes.

Place around 12 cutlets, brush or spray oil and cook them for 15 minutes at 200 Degree C.

Turn them after 8 to 10 minutes of cooking, repeat the process of spraying oil or brushing and air fry them until they are golden brown. Serve with accompaniment of your choice.

Recipe Notes

  • I have placed 12 cutlets (as you can see above) in one batch inside the basket. The remaining pieces were frozen and Air Fried the next day.
  • Do not over crowd the basket or avoid placing the cutlets one above the other to ensure even cooking and browning.
  • Always preheat your Air Fryer (similar to oven) for atleast 5 minutes before placing items to air fry.
  • The recipe is vegan and nut free.
  • I have used sesame oil for air frying the cutlets. You can use veg oil, olive oil etc as per availability.
  • Kashmiri Red Chilli Powder is added mainly for the colour and not spice. I have not used any green chillies either since I was serving the cutlets with a spicy green chutney.
  • Adjust spices according to your taste buds and preferences.

FAQ’s

Can I freeze the Veg Cutlets?

I air fried 12 cutlets and the remaining 8 pieces were frozen and air fried the next day. Thaw it completely before applying / spraying oil before air frying.

I have frozen cutlets for atleast 4 to 5 days as I usually make around 20 cutlets for a family of 2 to be used for a couple of days.

Can I reheat Air Fried Cutlets?

I highly recommend Air Frying the leftover cutlets instead of heating in microwave to avoid he cutlets from becoming soft. Preheat the Air fryer, chuck few pieces, as required, brush some oil and then air fry for around 5 minutes at 150 degrees. It will sizzle just like they are fried!

Does Air Fryer Cutlets taste exactly like the Fried Ones?

Answer is No. Fried version has bread crumbs, coating of cornflour which makes the exterior crispy. I have not used either of the ingredients but assure you that they are delicious and guilt-free snacks! Always serve Air Fryer snacks piping hot for best results!
