Delicious, Healthy and protein loaded Masala Chaas recipe with Sattu. An energy boosting, refreshing summer drink recipe you must try at home!

Come Summers and a jug of Sattu Buttermilk is made and stocked in our refrigerator at home. We consume it during noon when the sun is really strong OR as a refreshing and filling post meal drink.

Masala Chaas or Sattu Buttermilk is an excellent appetizer. During summers when your appetite goes for a toss, drinking a glass of this refreshing beverage restores lost energy and taste.

What is Sattu?

Before I begin explaining the recipe, let me take a minute and talk about Sattu.

Sattu is prepared by dry roasting grains like barley or bengal gram. The Sattu that I have used for the recipe is the Chana Sattu made from bengal gram.

Packed with protein, this is usually consumed as a beverage during summers to cool the body. It is a great source of vegan plant based protein, budget friendly and absolutely delicious.

Variety of recipes are made using Sattu Flour - Paratha with Sattu Stuffing, Sattu Namkeen Sharbat or beverage using sattu, lemon and water that helps you recover from sun stroke.

Being pure vegetarians, I love including Sattu as part of our breakfast. It keeps us fuller for longer.

About Masala Chaas and It's Benefits

The first step to making Chaas is setting the curd, the previous night.

Curd is made by boiling and cooling the milk, adding the culture and setting it aside undisturbed for few hours or overnight.

The next morning, fresh thick curd is ready to use. The curd or yogurt is refrigerated and used for raita, buttermilk and kadhi.

Buttermilk is made by diluting home made yogurt or curd (dahi) with water. Also known as Chaas in Hindi, this beverage is consumed post meal to aid digestion as yogurt is great for gut health.

Every Indian meal, especially lunch, ends with a glass of Chaas or Buttermilk. Every region across India makes buttermilk in their own style.

Neer Mor in South India adds tempering to the buttermilk mixture whereas North Indian lassi is thicker than buttermilk. It has both sweet and savory versions.

In Maharashtra, Mattha is made as a spiced buttermilk with the addition of ginger and herbs that aid in digestion.

While yogurt is cooling for the summer heat, sattu further adds to the "protein element". Together they make a refreshing and healthy combo.

How to Store and Serve Chaas?

I stock Masala Chaas in a tall glass jug, mud pots or clay pots and even terracota pots to keep it naturally cool.

Due to excess heat during summers, curd has the tendency to turn sour quickly and setting the curd in mud or clay pots help in keeping the curd fresh for long.

Ice cubes can be added while serving. During summers, I add herbs like mint and coriander leaves in the ice tray so that they can be quickly added to buttermilk or even lemon juice at home.

Narayan carries buttermilk bottles at work and keeps it stocked in the office refrigerator. Can be easily consumed during meetings and work calls.

Step by Step Recipe

(1) In a bowl, add curd or yogurt. Whisk well.

(2) Now add sattu flour, roasted jeera (cumin) powder and rock salt or kala namak to taste.

(3) In a mixer grinder jar, add ginger pieces, mint leaves, coriander leaves. Grind it using couple of spoons of water.

(4) Add this mixture to the curd. Whisk well. Now add water and adjust the chaas consistency

(5) Refrigerate this until further use or consume it immediately.

(6) This Chaas stays fresh (under refrigeration) for 24 hours.

Equipment

  • Mixer Grinder
  • Whisk

Ingredients
  

1 cup is 250 ml, 1 tablespoon is 15 ml, 1 teaspoon is 5 ml

  • 1 cup Thick Yogurt or Curd
  • 2½ cups Water
  • 2 tbsp Sattu Flour
  • ½ cup Coriander leaves
  • ¼ cup Mint Leaves
  • 1 tsp Ginger finely chopped
  • 1 tsp Roasted Jeera Powder / Bhuna Jeera Powder
  • Rock Salt or Kala Namak as per taste
  • Ice Cubes as required for serving

Instructions
 

  • In a bowl, add curd or yogurt. Whisk well.
  • Now add sattu flour, roasted jeera (cumin) powder and rock salt or kala namak to taste.
  • In a mixer grinder jar, add ginger pieces, mint leaves, coriander leaves. Grind it using couple of spoons of water.

This Chaas stays fresh (under refrigeration) for 24 hours.
