Easy One Pot Broccoli Rice Recipe

I have been MIA since last week due to some commitments at home, followed by a short travel break. Back rejuvenated and writing a blog post today definitely feels good, especially since the recipe I share here today is something that requires less effort, is a great option to cook when you are busy, tired with chores but want to avoid ordering or take out and provide simple meal to the entire family. Presenting, an uber delicious Broccoli Rice Recipe that is quick to put together, requires minimal prep work, one pot rice recipe and extremely easy to make at home.

Summers have been terrible this year and I have been trying my best to avoid preparing roti or chappati at home. Rice Varieties are my go to option these days and in the quest of making everyday lunch meals a delicious affair, I include variety of vegetables too. One such variety which is loved at home is the Broccoli Rice Recipe. A Quick vegetarian one pot rice recipe that takes barely 5 to 10 mins of chopping, few basic ingredients that puts a filling meal on the table.

Gluten Free Vegan Broccoli Rice

Broccoli Rice, a gluten free and vegan rice dish is ideal for busy mornings on weekdays, or a quick dinner, a potluck, a small gathering with friends or to feed a large crowd. This Broccoli Rice Recipe will turn Broccoli haters into lovers, kids included. Most kids are fussy and hate eating Broccoli, this recipe would certainly turn them around to Broccoli fans. Guaranteed!

Rice Recipes pair well with either a Dal or Raita. Since its summers in India, I choose to serve the Broccoli Rice with a cooling bowl of Raita, some cucumber and carrots, seasonal pickles. Alternatively, you can serve this rice dish with a piping hot dal too.

Vegetarian, low prep Broccoli Rice

Raita varieties like Mixed Vegetable Raita, Cucumber and Courgette Thayir Pachadi would be an apt choice for the summers.

For Wholesome Dal varieties, you can try Gujarati Trevti Dal and Methi Che Ambat Goad Varan (sweet and sour Maharashtrian Dal recipe).

Let us now look at the easy step by step pics of how to make Broccoli Rice at home.

Broccoli Rice Recipe

Prep Time 15 mins (includes soaking time)

Cook Time 15 to 20 mins

Serves 3

Ingredients

  • 1 cup (250ml) Basmati Rice
  • 1/2 kg Broccoli
  • 2 tblsp oil
  • 1 tsp Jeera or Cumin seeds
  • 3 medium sized onions finely sliced
  • 1 tblsp grated ginger
  • 2 green chillies roughly chopped
  • 1/2 tsp Red chilli Powder / Lal Mirch
  • 1/4 tsp Turmeric Powder or Haldi
  • 1/2 tsp Garam Masala Powder
  • Water (1 cup for soaking rice + 1 cup for pressure cooking)
  • Salt to Taste

Method

(1) Soak the Basmati Rice with 1 cup of water for atleast 15 minutes.

(2) Wash, Rinse, Chop the Broccoli into Florets and keep aside.

(3) Finely slice the onions, grate the ginger and roughly chop the green chillies.

(4) Heat a wok, Kadhai or pan, add oil.

(5) Add jeera or cumin seeds along with grated ginger. Saute for a few seconds and then add the sliced onions, green chillies.

(6) Cook onions until translucent.

(7) Add the broccoli florets with turmeric powder, red chilli powder and garam masala powder.

(8) Add the soaked and drained Basmati Rice to pan along with salt to taste. Mix well and Switch off flame.

(9) Transfer the rice to a pressure cooker vessel and add 1 cup of water. Cover and cook until 4 - 5 whistles. Cool and serve with accompaniment of your choice.

  • 1 cup Basmati Rice / Long Grain Rice 1 cup is 250 ml
  • 500 gms Broccoli
  • 2 tbsp Oil Any neutral oil
  • 1 tsp Jeera or Cumin Seeds
  • 3 nos. Medium Sized Onions Finely Sliced
  • 1 tbsp Grated Ginger
  • 2 nos. Green Chillies (roughly chopped)
  • 1/2 tsp Red Chilli Powder or Lal Mirch Powder
  • 1/4 tsp Turmeric Powder or Haldi Powder
  • 1/2 tsp Garam Masala Powder
  • 2 cups Water (1 cup for soaking + 1 cup for cooking)
  • Salt to taste

Notes

Instead of oil, you can add ghee, it enhances flavour. Since this recipe is vegan, I have avoided the same.
