Broccoli Rice, a gluten free, vegan rice dish ideal for busy mornings on weekdays, or a quick dinner, a potluck, a small gathering with friends or to feed a large crowd. This Broccoli Rice Recipe will turn Broccoli haters into lovers, kids included.

1cupBasmati Rice / Long Grain Rice 1 cup is 250 ml
500gmsBroccoli
2 tbspOil Any neutral oil
1 tspJeera or Cumin Seeds
3nos.Medium Sized Onions Finely Sliced
1 tbspGrated Ginger
2 nos.Green Chillies (roughly chopped)
1/2tspRed Chilli Powder or Lal Mirch Powder
1/4 tspTurmeric Powder or Haldi Powder
1/2 tspGaram Masala Powder
2 cups Water (1 cup for soaking + 1 cup for cooking)
Salt to taste
Instructions
Soak the Basmati Rice with 1 cup of water for atleast 15 minutes.
Wash, Rinse, Chop the Broccoli into Florets and keep aside
Finely slice the onions, grate the ginger and roughly chop the green chillies.
Heat a wok, Kadhai or pan, add oil
Add jeera or cumin seeds along with grated ginger. Saute for a few seconds and then add the sliced onions, green chillies.
Cook onions until translucent
Add the broccoli florets with turmeric powder, red chilli powder and garam masala powder.
Add the soaked and drained Basmati Rice to pan along with salt to taste. Mix well and Switch off flame.
Transfer the rice to a pressure cooker vessel and add 1 cup of water. Cover and cook until 4 - 5 whistles. Cool and serve with accompaniment of your choice
Notes
Instead of oil, you can add ghee, it enhances flavour. Since this recipe is vegan, I have avoided the same.
