Pear Salad with Feta Cheese, Apples and Walnuts

We absolutely love Pears. The “Bell shaped” fruit that is also called “Nashpati” in Hindi. While we do enjoy the fruit, we particularly love salads that include pears. This Pear Salad with feta Cheese, apples and Walnuts combined with my 5 Ingredient Quick Salad Dressing is one of the best and easiest vegetarian salad recipes that you can try at home for thanksgiving dinner.

It is a known fact that the salty feta cheese and sweet fruits make a great combination. While cheese is one of those rare ingredients purchased at home, feta cheese is my guilty pleasure! Once in a quarter, I love buying feta only to make salads incorporating fresh seasonal fruits.

Watermelon and Feta has been a classic combination which most love. I also have a Cherry Cucumber Feta Salad Recipe that uses fresh cherries.

When I make salads at home, I go all out and make a big bowl to enjoy as lunch. A light soup or pasta tossed with some vegetables also make a perfect main course to this lovely refreshing side of salad.

Pears are both soft and crunchy. In India, pears are available during monsoons and they are in season for a couple of months. We get two varieties – one is small and hard but extremely juicy and the other is the big variety which is soft and sweet. For this particular recipe, I have chosen the latter – the soft variety of pears.

While rocket or arugula leaves would have been an apt choice for this salad, I went with what was easily available in the nearest supermarket. The Indian Lettuce. Frankly, finding a fresh batch of lettuce or rather any leafy greens during monsoons is a challenge.

We love our salads crunchy with a bit of both vegetables and fruits. We prefer the salty and sweet combination. Plus I love loading up the salad with whatever is available in the refrigerator.

Ingredients for Pear Salad

  • Fresh Pears
  • Feta Cheese – 100 gms of Crumbled Feta is used for this recipe. I have used a vegetarian feta cheese with No Animal Rennet.
  • Apples – I have used Kashmiri Red Apples (local Indian variety). You can use Granny Smith Green Apples too for this recipe. Unfortunately, it was not available else that would be a perfect choice for its tangy and sweet taste.
  • Lettuce – You can use Iceberg, romaine lettuce, Lollo Rosso or Arugula (rocket leaves) instead. You could also use a combination of these greens to bulk up the salad.
  • Capsicum – I have used Capsicum or Indian Shimla Mirch. You can opt for coloured peppers instead. It adds to the crunch.
  • Walnuts – Can be easily replaced with pine nuts, brazil nuts, macademia nuts or simple almonds. You can either toast them or add them plain – your choice!
  • Black Olives – Elevates the taste of the salty feta cheese. Note – Another reason is olives are the first thing my husband picks from a super market shelf. He absolutely loves the black ones.

Salads can only be made interesting with a delicious Salad Dressing – Agree? Like I mentioned earlier, we love salads that are sweet and salty. I try not to buy store bought salad dressing so my go-to salad dressing recipe is quite simple which I use for almost all my salads.

My 5 ingredient Salad Dressing Recipe that you must try!

  • Black Pepper Powder
  • Himalayan Pink Salt (Regular salt or sea salt can be used)
  • Jaggery (No refined sugar used)
  • Lemon Juice
  • Olive Oil

Sounds simple, doesn’t it? The use of jaggery in the dressing is one of the best things. Don’t have jaggery? Replace with honey. Simple!

Making ahead the salad

If you are treating your guests or family with this lovely salad recipe, you can just prep the ingredients in advance – Slice the olives, chop the pepper, crumble the feta.

The only issue is that fruits like Pear and Apples discolor after they are cut. Once the discoloration happens, the taste is affected too which is why you can either chop the fruits before serving or soak them in some water mixed with lemon juice. Citrus fruits prevents the oxidization process. However, I would still recommend prepping the fruits just before serving.

This hearty salad can be served for 4 people as an appetizer or a side to your main course. As lunch, this would serve 2 people.

This is an everyday salad recipe and can be easily customized according to seasonal ingredients. When pears are in season (holidays), this would make a great addition to the thanksgiving lunch or dinner with family.

Let us now take a look at the detailed recipe below.

Pear Salad Step by Step Recipe

Immerse lettuce leaves in a bowl of water. Clean them well, drain excess water in a colander and pat them dry with a kitchen towel. Remove excess moisture else the salad will be very soggy once the dressing is added. Add the lettuce to a big bowl.

Roughly chop the pears and apples into thick cubes and add it to the bowl.

Now add the sliced olives and chopped capsicum (bell pepper). Refrigerate this for atleast 30 minutes.

In a separate bowl, add all the ingredients for the salad dressing (jaggery + salt + pepper + olive oil + lemon juice). Mix well and keep aside. Note – If you are serving this later, mix and keep it refrigerated.

5 ingredient easy salad dressing

Once you toss all the ingredients for the salad, crumble the block of feta cheese and add it to the salad.

Now pour the salad dressing all over, add chopped walnuts and toss once again. Serve immediately.

Ingredients
  

  • 3 nos. Pears
  • 2 nos. Apples
  • 1 head Lettuce Approx 5 cups of roughly torn lettuce
  • 20 nos. Black Olives (Sliced)
  • 1/2 cup Capsicum Finely chopped
  • 100 gms Feta Cheese
  • 2 tbsp Chopped Walnuts

FOR THE SALAD DRESSING

  • 1/2 tsp Black Pepper Powder
  • 2 tbsp Jaggery (powdered)
  • 1/4 tsp Himalayan Pink Salt
  • 2 nos Lemon (Juice extracted)
  • 1 tbsp Olive Oil

    Did I read pear and feta cheese?? Then that’s a perfect salad dish for me. I love hearty, flavorful salads with fruit and cheese added.     I love fresh fruit salads and this one with seasonal pears , apples with cheese and walnuts sounds absolutely juicy and refreshing.
