Need healthy breakfast Ideas? Look No more! Presenting, healthy, nutritious, low oil quick South Indian Breakfast recipe, Oats Mixed Millet Dosa. The Millet Dosa requires NO Fermentation, low prep work and is made with a mix of millet flours and oats.
Generally we stock Millet flours more than the whole millets and sometimes we wonder what can be done with them. This dosa recipe uses Millet Flours namely Ragi and Bajra, which is commonly found in an Indian pantry.
By the way, if you have Bajra Flour at home, you must try Instant Kambu Dosai or Instant Bajra Flour Dosa that tastes exactly like Rava dosa without any processed flour.
Planning a breakfast is easier said than done. Don't you agree? There are days when you are fully prepared while some days you open the refrigerator door and stare at the fully stocked fridge wondering what to cook.
Healthy meal planning further adds a bit of stress as the family expects you to dish a new breakfast recipe every day. The Oats Mixed Millet Dosa is going to be your weekly breakfast menu at home, once you make it.

I like to experiment with a variety of Millets like Proso, Kodo and Finger Millet (Ragi). There are many recipes using Millets on the blog that are easy to make at home and are nutritious.

For this particular recipe, I have used Little Millet or Samai Rice, also known as Kutki in Hindi. The grains are very tiny hence can be soaked and ground easily and makes a good replacement to rice.
Here is what you need for making the Millet Dosa -
- Samai Rice or Little Millet
- Quick Cooking Quaker Oats
- Bajra or Kambu Flour (Pearl Millet)
- Sprouted Ragi Flour / Nachni Flour / Finger Millet
- Rice Flour / Arisi Podi
- Urad Dal
Note - Sprouted Ragi Flour has a lovely earthy aroma. In case you are not able to find it, use regular Ragi Flour.

Once all the ingredients are ready and since we are using mostly ready made millet flours along with oats and rice flour. The only ingredients remain are Urad Dal and Little Millet that need 2 hours of soaking and grinding.
Since this is a no fermentation dosa recipe, you can prepare the dosas as soon the batter is ground and the ready made flours are added.
If you want, you can go ahead and ferment the batter for 8 to 10 hours and make dosas too.
Except Oats, all the other flours are gluten free in nature. The Recipe is Vegan. Apart from the Millets used above, you can add or subtract any millet as per availability.
Accompaniments for Millet Dosa
Let us look at the recipe, easy step by step pictures and make a batch of this nutritious, fibre rich Dosa for the entire family.
Step by Step Recipe Oats Mixed Millet Dosa
(1) Soak Samai Rice and Urad dal for 2 hours, drain the water and grind it along with oats and half cup of water.
(2) Now add the batter (samai rice + Urad Dal + Oats) into a wide bowl.
(3) Add the flours - Bajra, Ragi, Rice along with salt.
(4) Mix well and add water to adjust batter consistency.
(5) Rest this batter for 30 minutes and then proceed to make the dosas.
(6) For making the dosa - Heat a griddle, season it with a drop of oil.

(7) Carefully pour a ladle of batter on the griddle and gently spread the batter. Pour oil on all the sides and allow it to cook over medium flame.
(8) Flip the dosas and repeat the process of adding some oil. Serve hot with chutney.
Recipe Notes
- We use sesame oil or gingelly oil at home. You are however, free to use any variety of oil. Sesame oil has an excellent aroma. Ghee is another good option especially when making for kids.
- Feel free to experiment with flours and millets that are available in your pantry.

Oats Mixed Millet Dosa
Equipment
- Mixer Grinder
- Dosa Tava
Ingredients
- 1 cup Samai Rice or Little Millet 1 cup is 250 ml
- 1/4 cup Urad Dal
- 1 cup Oats I have used Quaker Quick cooking oats that has been slightly roasted
- 3 tbsp Bajra Flour 1 tbsp is 15 ml
- 2 tbsp Rice Flour
- 3 tbsp Sprouted Ragi Flour
- Water for grinding
- Oil as required to cook the dosas
- Salt to taste
Instructions
- Soak Samai Rice and Urad dal for 2 hours, drain the water and grind it along with oats using some water.
- Now add the batter (samai rice + Urad Dal +Oats) into a wide bowl.
- Add the flours - Bajra, Ragi, Rice together with salt to taste.
- Mix well and add water to adjust batter consistency.
- Rest this batter for 30 minutes and then proceed to make the dosas.
- For making the dosa - Heat a griddle, season it with a drop of oil.
- Carefully pour a ladle of batter on the griddle and gently spread the batter. Pour oil on all the sides and allow it to cook over medium flame.
- Flip the dosas and repeat the process of adding some oil. Serve hot with chutney.
Notes
- The quaker quick cooking oats has been roasted for a few minutes before being ground. I usually stock roasted oats for chillas, pancakes or dosa. You can skip it if you don't find time.
- We use sesame oil or gingelly oil at home for dosas. You are however, free to use any variety of oil. Sesame oil has an excellent aroma. Ghee is another good option especially when making for kids.
- Feel free to experiment with flours and millets that are available in your pantry.
- It is recommended to rest the batter for 30 minutes before making dosas. The reason is we are using ready made flours that would take some time to absorb the water and turn soft. If you make dosas immediately, chances are it might tear.
- You can store the batter in the refrigerator for a couple of days. The batter might thicken after a day or so, add water and adjust consistency. If you find the batter sticky, add a tbsp of rice flour.
