Quinoa Sweet Potato Patties served with chutney

Delicious and healthy Quinoa Patties with sweet potatoes. These Baked Vegan Quinoa Cakes are low oil, filling, healthy and perfect for snacking. Low on prep, makes a filling side or appetizer and can be made-ahead, used in a variety of ways.

It took me quite sometime to change Narayan's perception about Quinoa. Years ago, on one of his business trips abroad, he tasted the most unappetizing meal of quinoa.

Today, he is a fan of these patties. We make it regularly at home and enjoy with a side of coriander chutney or tomato ketchup. We also love it with Cilantro Mint Yogurt Sauce.

These patties can be Air Fried, Baked or shallow fried. Either ways, this is a delightful way of including Quinoa in your diet. This recipe is guaranteed to please each and every member of your family, kids included.

Ingredients

List of ingredients - Cooked Quinoa, boiled sweet potato, onion, cilantro, spices and coarsely ground rolled oats

Quinoa - I cook Quinoa in Instant Pot as its easy, requires no monitoring and the best part - IT COOKS PERFECTLY!

If you don't have Instant Pot, you can cook quinoa on stove top or pressure cooker.

Note - If you have leftover rice at home, you can reduce half the quantity of cooked quinoa and replace with cooked rice. Best way to use leftovers.

Sweet Potato - Boiled Sweet Potatoes are used. Substitute sweet potatoes with regular potatoes.

Old Fashioned Rolled Oats - I have used rolled oats for the recipe. The oats are ground finely and used. They are a perfect replacement for breadcrumbs and/or flour.

Instant Oats or Quick Cooking Oats also works with this recipe.

Spices - I have used Garam Masala Powder. You can substitute with Curry Powder or just add some ground coriander and cumin.

Thanks to baking, very little oil is used for the patties. I use cooking spray (vegetable oil). It is easy and convenient.

Other ingredients are provided in the recipe card below with detailed measurements.

How to make Vegan Quinoa Patties

This is literally a one bowl recipe where you can add all the ingredients, mix, shape and bake.

In a Bowl, mash the Sweet Potatoes, add the cooked quinoa, spices, cilantro and seasoning.

Shape these into 14 equal size patties. Refrigerate (highly recommended) for 20 to 30 minutes (depending on how hungry you are).

The patties can be shaped and frozen in an airtight container. It can also be refrigerated for couple of days and baked later.

Equipment

  • Baking Tray - 13 inch x 11 inch with 0.5 inch height

Ingredients

  • 500 grams Sweet Potatoes Boiled, peeled and mashed
  • 1 cup Cooked Quinoa
  • 1 cup Rolled Oats ground into fine powder
  • 2 Onions medium size or 3/4 cup finely chopped onions
  • 2 teaspoon Garam Masala Powder
  • ½ teaspoon Red Chilli flakes
  • ¼ teaspoon Black Pepper Powder
  • ½ cup Cilantro finely chopped
  • Cooking Spray (Vegetable Oil) Read Notes

1 cup 250ml, 1 tbsp 15 ml, 1 tsp 5 ml

Instructions

  • In a large bowl, add boiled and mashed sweet potatoes, cooked quinoa, ground oats, finely chopped onions, spices, salt to taste and cilantro.
  • Mix well and shape them into 14 equal size patties.
  • Refrigerate for 20 to 30 minutes. Note - If not using immediately, store them in a container and bake / shallow fry later.
  • Pre-heat the oven at 180 Degree Celsius for 10 minutes.
  • Spray the baking tray with some oil. Once the oven is pre-heated, place the patties for cooking on the tray. Spray oil on top and bake it for 20 to 30 minutes. (Read Notes Below)
  • Halfway through baking, remove the tray from the oven, turn the patties, spray some oil and bake again. This would lead to even browning.
  • Once done, serve with an accompaniment or dip of your choice.

Notes

  1. You can substitute Quick Cooking oats or instant oats instead of rolled oats for this recipe. Measure and then grind into a fine powder.
  2. Cooking time (Air Fryer) - It takes 20 minutes at 180 degree Celsius (in two batches) for the 14 patties to cook. These have to be turned over halfway through cooking. Spray oil to prevent the patties from drying.
  3. Cooking Time (Oven) - It has taken me about 25 minutes to bake these at 180 Degrees Celsius. Oven time may vary, please keep an eye after about 15 mins of baking time.
  4. Refrigerating the patties is recommended. If making ahead, these can be shaped and stored in an airtight container, overnight.
  5. Cooked patties can be reheated in a microwave or air fryer.
  6. These quinoa patties can be easily cooked on stove-top over a cast iron or non-stick pan / skillet. It will consume more oil as compared to air fryer or baking method.
  7. I have used a cooking spray (vegetable oil) for this recipe.
  8. These baked patties cannot be compared to deep fried or shallow fried patties. For crispy patties, shallow fry on a skillet pan.

Hi, I used 3 sweet potatoes that weighed 500 gms. The potatoes I used were fairly large. 6 medium size should be okay, I presume. Hope this helps. Thanks Gaya.

I liked it. The gara masala and pepper spice was interesting. I think next time I might replace the spices with a little maple syrup and cinnamon to make it more of a desert.
