Quinoa Patties with Sweet Potato (Vegan)

Vegan Quinoa Sweet Potato Patties is a scrumptious appetizer, snack or finger food recipe and the best way to enjoy quinoa. These patties or savory quinoa cakes double up as burger patty, wraps or filling for sandwiches. Easy recipe using pantry stapes, is freezer-friendly, can be made ahead.

Equipment

  • Baking Tray - 13 inch x 11 inch with 0.5 inch height

Ingredients

  • 500 grams Sweet Potatoes Boiled, peeled and mashed
  • 1 cup Cooked Quinoa
  • 1 cup Rolled Oats ground into fine powder
  • 2 Onions medium size or 3/4 cup finely chopped onions
  • 2 teaspoon Garam Masala Powder
  • ½ teaspoon Red Chilli flakes
  • ¼ teaspoon Black Pepper Powder
  • ½ cup Cilantro finely chopped
  • Cooking Spray (Vegetable Oil) Read Notes

1 cup 250ml, 1 tbsp 15 ml, 1 tsp 5 ml

Instructions

  • In a large bowl, add boiled and mashed sweet potatoes, cooked quinoa, ground oats, finely chopped onions, spices, salt to taste and cilantro.
  • Mix well and shape them into 14 equal size patties.
  • Refrigerate for 20 to 30 minutes. Note - If not using immediately, store them in a container and bake / shallow fry later.
  • Pre-heat the oven at 180 Degree Celsius for 10 minutes.
  • Spray the baking tray with some oil. Once the oven is pre-heated, place the patties for cooking on the tray. Spray oil on top and bake it for 20 to 30 minutes. (Read Notes Below)
  • Halfway through baking, remove the tray from the oven, turn the patties, spray some oil and bake again. This would lead to even browning.
  • Once done, serve with an accompaniment or dip of your choice.

Notes

  1. You can substitute Quick Cooking oats or instant oats instead of rolled oats for this recipe. Measure and then grind into a fine powder. 
  2. Cooking time (Air Fryer) - It takes 20 minutes at 180 degree Celsius (in two batches) for the 14 patties to cook. These have to be turned over halfway through cooking. Spray oil to prevent the patties from drying. 
  3. Cooking Time (Oven) - It has taken me about 25 minutes to bake these at 180 Degrees Celsius. Oven time may vary, please keep an eye after about 15 mins of baking time. 
  4. Refrigerating the patties is recommended. If making ahead, these can be shaped and stored in an airtight container, overnight. 
  5. Cooked patties can be reheated in a microwave or air fryer. 
  6. These quinoa patties can be easily cooked on stove-top over a cast iron or non-stick pan / skillet. It will consume more oil as compared to air fryer or baking method. 
  7. I have used a cooking spray (vegetable oil) for this recipe. 
  8. These baked patties cannot be compared to deep fried or shallow fried patties. For crispy patties, shallow fry on a skillet pan.
