Sugar Free Dates, Rose and Pistachio Ladoos

Sugar Free Dates, Rose and Pistachios Ladoos that are loaded with pistachios, edible rose petals, a mild dusting of poppy seeds or khus khus

Dates Ladoo Sugar Free
I am a big fan of home made ladoos. I rarely buy ladoos from the sweet shop and prefer making a small batch at home with ingredients available in the refrigerator or pantry. One such variety of home made ladoo that I make regularly at home are the Sugar Free Dates, Rose and Pistachio Ladoos. Yes, they are absolutely SUGAR FREE! Who needs sugar when you have dates and apricots? These dates ladoos are not only good to control sweet cravings but are excellent 4 pm snack too. It is excellent for travelling and I make these ladoos for gifting during Diwali too as they have long shelf life and can be consumed much later, post Diwali (under refrigeration). You can also gift these dates ladoos for Rakshabandhan, make them for Ganesh Chaturthi as Prasad and even enjoy as a snack on fasting days. These dates ladoos make an ideal gift instead of chocolates or packed dry snacks that are high in sugar and sodium respectively. Sugar Free Dates Rose and Pista Ladoos Some Sweets or Dessert Recipes that can be made for all occasions at home are Rava Ladoo, Mysore Pak and Nariyal Barfi. The ingredients (dry fruits) keeps you energized throughout the day. I would also suggest packing a ladoo in your kids tiffin box or serve them as an after school snack. Since they are both home made and sugar free, you do not have to worry! While I have added Pista and a touch of rose petals to the recipe, feel free to add available nuts in your pantry. Some choices would be – Cashews, Almonds, Walnuts etc. In case you do not have Apricots – Increase the quantity of Dates! Simple!

Step by Step Recipe to Make Sugar Free Dates Ladoos

  1. In case you don’t have seedless dates, de-seed them and keep aside.
  2. Roughly chop the pistachios and keep aside.
  3. Soak the dates and the figs or anjeer in the warm water for 30 minutes.
  4. The figs would swell up and both the dry fruits will be soft and mushy.
  5. Grind them in a mixer and grinder until smooth paste. Add very little water as much as possible.
  6. Heat a kadhai, add 1 tblsp of ghee or clarified butter. Add the figs and the date paste.
  7. On low heat, keep stirring this mixture until it tightens up a bit and collects in the centre of the kadhai. Add the remaining 2 tblsp of butter during the process of cooking at regular intervals to avoid burning of the mixture at the bottom.
  8. In 10 odd minutes, you will see the mixture would have thickened, it is time to add the khuskhus, edible rose petals and chopped pista.
  9. Keep stirring the mixture until everything has incorporated well. Switch off the flame and allow it to cool completely.
  10. In the meanwhile, grease a baking paper sheet and keep aside.
  11. Once the mixture has cooled down, place it on the baking sheet, apply some ghee on your hands and work the mixture by very slow kneading.
  12. Then shape the mixture into balls, roll them over edible rose petals, pat them once again and keep aside on a plate.
  13. Refrigerate this until you plan to distribute. These ladoos remain fresh for long and are ideal for long distance travel snack too.




Don’t worry, this dessert has a longer shelf life which means you can savour it slowly, long after the festivities are over!

Ingredients
  

  • 1 1/2 cups Deseeded Dates 1 cup is 200 ml measurement
  • 10 nos. Figs or Anjeer
  • 1 cup Warm Water
  • 1 cup Roughly chopped Pistachios
  • 1/4 cup Edible Rose Petals (keep some aside for garnish)
  • 1 tbsp Khus Khus or Poppy Seeds
  • 3 tbsp Ghee or Clarified Butter + more to grease parchment paper

Notes

  • Always grease your hands with some ghee or clarified butter while shaping the ladoos. Dates tend to stick on your palms. 
  • Cool the mixture and then shape the ladoos. Hot mixture will only keep sticking to your palms. 
  • Avoid adding water while grinding the dates and figs. Less water will make the shaping of ladoos easier and also reduce the cooking time.

    This was on my shortlist too before I decided on the Kootu. This Diwali passed in a blur because of work commitments and let me see if I can make these for New Year. I loved the addition of the rose to this.
