Notes

  1. I have used my 6 Qt. Instant Pot. While I have only steamed 500 grams or half a kilo or baby potatoes, the steamer basket can hold 1 kilo of baby potatoes. Cook time remains unchanged.
  2. After placing the trivet, For 6 Qt Instant Pot, add 1 cup water and for 8 Qt, use 2 cups.
  3. The steamer basket that I have used is a foldable one. It does not have legs for support, hence needs to be placed on a trivet.
  4. Placing the steamer basket on the trivet actually prevents direct contact with water while pressure cooking, keeping the potatoes nice and dry.
  5. Even though active cooking time is 5 mins, it takes a while to build pressure in the Instant Pot. Passive time includes time taken for natural pressure release which is approximately 15 minutes.
  6. Once the potatoes have cooked, check doneness by using a fork or toothpick. If the center is uncooked or hard, close the lid and pressure cook for 2-3 mins, followed by QPR.
  7. For making sabzi or stir fries, peel the skin once its completely cool OR comfortable enough to handle.
Storage -
  • Cooked baby potatoes, once cool, can be packed in an airtight container and stored in the refrigerator for 5-6 days (depending on weather conditions).
  • If you are expecting guests at home or have a large gathering of people for Sunday lunch, you can peel and freeze a batch of baby potatoes to make quick potato roast.
  • Peeling the potatoes is not mandatory. However for sabzi or stir fry, we prefer peeling the skin as it tends to absorb the spices and oil better.
