2 cups Green Moong Sprouts 1 tablespoon Coconut oil ½ teaspoon Urad Dal or Ulutham Paruppu ½ teaspoon Mustard Seeds, Kadagu or Rai 3 - 4 Whole Red Chillies or use green chilies, finely chopped 3 tablespoon freshly Grated coconut A pinch of Hing or Asafoetida A sprig of curry leaves or few as required salt to taste
Steam moong sprouts for 5-8 minutes or until tender.
Heat a pan, add coconut oil, mustard seeds, urad dal and dry red chilies.
Once mustard crackles, add hing or asafoetida, curry leaves. Then add steamed sprouts, salt to taste and mix.
Add fresh coconut and switch off the flame, serve.
Tempering - Substitute coconut oil with sesame oil or any neutral flavor cooking oil for the recipe.
Green Gram sundal is Vegan. For a 100% gluten free recipe, refrain from adding hing or asafoetida.
If you like spicy sundal, add finely chopped green chilies or red chili powder / paprika.
We love adding Sundal Masala Powder (lentil based spice mix) to cooked beans / sprouts. You can avoid coconut if using sundal podi.
Leftovers - Stays fresh for a day or two, depending on weather. Re-heat for 30 seconds and consume.
