Pineapple Raita is a easy Indian Side dish or accompaniment to main course recipes like Biryani, Pulao and spicy curries. Made with fresh curd and pineapples, this raita is sweet in taste. An easy 15 minute recipe that doubles up as a quick dessert.
1 cup is 250 ml, 1 tablespoon is 15ml, 1 tsp is 5 ml
1 ½cupCurd (Fresh and Thick)
¾cupPineapples (Roughly chopped)
1tspSugar
¼tspKashmiri Red Chilli Powder
1tbspCilantro or Coriander leaves finely chopped
Salt to taste
Instructions
In a bowl, add thick curd, whisk well to remove any lumps. Add sugar, finely chopped cilantro or coriander leaves and kashmiri red chilli powder along with salt to taste.
If serving immediately, add the chopped pieces of pineapple, mix and serve. Refrigerate the ingredients separately, if serving later. Once guests arrive, mix and serve immediately.
Notes
Adjust the quantity of sugar and red chilli powder according to your preference. The pineapples were naturally sweet so I have used 1 tsp sugar for the recipe.
Use thick curd and do not add water while whisking.
