Beans Carrot Thoran / No Onion No Garlic Kerala Stir Fry Veg
The Beans Carrot Thoran is a No Onion No Garlic Kerala Style Stir Fry Veg which is served for Sadya Meals. Delicious, Easy to Make, Vegetarian, Gluten Free and Vegan.

- 1/4 kg Beans / French Beans
- 1/4 kg Carrots
- 1/2 tsp Turmeric Powder
- 1 tbsp Coconut Oil
- 1/2 cup Grated coconut
- 1/2 tsp Jeera or Cumin Seeds
- 2-3 nos Green chillies
- 1/2 tsp Mustard Seeds
- 1/2 tsp Urad Dal
- 1-2 nos Whole Red chillies
- Few sprigs of curry leaves
- Salt to taste
Wash, string the french beans and peel the skin of the carrot, trim the ends and finely chop them both.
Add the vegetables to a vessel (for pressure cooking) along with salt to taste and turmeric powder.
Cover the vessel with a lid and pressure cook for 3 whistles. Do not add water.
In the meanwhile, grind 1/2 a cup of grated coconut with 1/2 tsp of Jeera or cumin seeds and 2 green chillies.
Keep this aside. Once the carrot and beans have cooked, heat a kadhai, add 1 tbsp coconut oil.
Add mustard seeds, urad dal and whole red chillies. Allow the mustard to crackle
Add the cooked carrot and beans, some curry leaves and cook until the moisture has evaporated.
Add the minced coconut mixture to the stir fry and mix everything well.
Switch off the flame and serve immediately or pack in tiffin (after cooling).
- You can add vegetables like peas and corn too to this thoran to make it interesting for kids.
- Adjust the quantity of green chillies as per your preference.
