Beans Carrot Thoran / No Onion No Garlic Kerala Stir Fry Veg

Equipment

Ingredients

  • 1/4 kg Beans / French Beans
  • 1/4 kg Carrots
  • 1/2 tsp Turmeric Powder
  • 1 tbsp Coconut Oil
  • 1/2 cup Grated coconut
  • 1/2 tsp Jeera or Cumin Seeds
  • 2-3 nos Green chillies
  • 1/2 tsp Mustard Seeds
  • 1/2 tsp Urad Dal
  • 1-2 nos Whole Red chillies
  • Few sprigs of curry leaves
  • Salt to taste

Instructions

  • Wash, string the french beans and peel the skin of the carrot, trim the ends and finely chop them both.
  • Add the vegetables to a vessel (for pressure cooking) along with salt to taste and turmeric powder.
  • Cover the vessel with a lid and pressure cook for 3 whistles. Do not add water.
  • In the meanwhile, grind 1/2 a cup of grated coconut with 1/2 tsp of Jeera or cumin seeds and 2 green chillies.
  • Keep this aside. Once the carrot and beans have cooked, heat a kadhai, add 1 tbsp coconut oil.
  • Add mustard seeds, urad dal and whole red chillies. Allow the mustard to crackle
  • Add the cooked carrot and beans, some curry leaves and cook until the moisture has evaporated.
  • Add the minced coconut mixture to the stir fry and mix everything well.
  • Switch off the flame and serve immediately or pack in tiffin (after cooling).

Notes

  • You can add vegetables like peas and corn too to this thoran to make it interesting for kids.¬†
  • Adjust the quantity of green chillies as per your preference.¬†
  • 1 cup is 250 ml measurement¬†
